On the eve of the Michelin Guide France & Monaco 2026 Ceremony, more than 100 chefs gathered at the Hôtel de Paris Monte-Carlo for a unique Chefs’ Dinner.

Organised by the MICHELIN Guide in partnership with Monte-Carlo Société des Bains de Mer, the evening welcomed 110 two- and three-Michelin-starred chefs in a rare gathering of culinary talent.

Held in the presence of H.S.H. Prince Albert II, Stéphane Valeri, Chairman and CEO of Monte-Carlo Société des Bains de Mer, and Gwendal Poullenec, International Director of the MICHELIN Guide, the dinner served as a prestigious prelude to the unveiling of the 2026 guide.

This year marks a historic milestone for the Principality: Monaco is hosting the MICHELIN Guide France & Monaco Ceremony for the first time, reinforcing its status as one of the leading destinations for international haute cuisine. As the hospitality partner for the event, Monte-Carlo Société des Bains de Mer played a central role in the celebrations, hosting the Chefs’ Dinner on Sunday evening as a highlight of the programme.

Set within the grandeur of the Salle Empire at the Hôtel de Paris Monte-Carlo and the legendary Le Louis XV Alain Ducasse, the evening brought together some of the most influential figures in modern gastronomy. Among them were the chefs who shape Monaco’s culinary reputation, including Alain Ducasse, Yannick Alléno, Marcel Ravin, and Dominique Lory.

The menu for the evening was conceived by Alain Ducasse, inspired by the latest vintages of Dom Pérignon and developed in collaboration with chef Emmanuel Pilon. Staying true to Ducasse’s Mediterranean-inspired Naturality philosophy, the dinner celebrated the richness of the region’s produce. Ingredients emblematic of the Riviera – chickpeas, red mullet, citrus fruits and other Mediterranean treasures – were showcased in a cuisine that prioritised vegetables while incorporating a select number of sustainably sourced fish dishes.

Textures, intensely flavoured sauces and meticulous preparation defined the menu, with every element used thoughtfully, including fish trimmings, to deliver a modern yet deeply authentic expression of Mediterranean flavours.

“Long ago, I planted my roots on the shores of the Mediterranean,” said Alain Ducasse. “With Naturality, it continues to inspire me to create a contemporary, responsible and flavourful cuisine. Last night, I had the great pleasure of sharing it with my colleagues and friends.”

Nearly 250 guests including chefs, culinary professionals, journalists, partners and official figures, attended the evening at the iconic palace overlooking Place du Casino, creating a rare moment of exchange among the leaders of global gastronomy.

Hosting such an exceptional gathering of Michelin-starred chefs in Monaco, on the eve of the MICHELIN Guide France & Monaco Ceremony, is a great source of pride for Monte-Carlo Société des Bains de Mer. This evening illustrates our Group’s ongoing commitment to making the Principality of Monaco one of the international capitals of gastronomy and the art of living.”

By bringing together such a remarkable concentration of Michelin-starred talent, the Chefs’ Dinner highlighted Monaco’s unique place on the global gastronomic map, and reaffirmed Monte-Carlo Société des Bains de Mer’s enduring dedication to culinary excellence.
